October 30, 2014 – Carroll Lutheran Village hosted the third annual Off the Shelf Gala to benefit Carroll County County Food Sunday on October 23. Executive Chef Chris Spear prepared a gourmet meal around the concepts of sustainable, local, and use it all.
The ingredient list included corn husks and corn cobs; pig’s head, heart and shoulder; beef tongue; chicken liver, skin and fat; salmon bellies; invasive Maryland catfish; cauliflower cores; rainbow chard stems; watermelon rind; venison; turnips and turnip greens; red cabbage; parsnips and celery leaves.
Appetizers served during the cocktail hour included a roasted hog’s head, green curry sausage, hog’s heart pastrami, headcheese, chopped liver, sweet & sour salmon bellies, and sauerbraten beef tongue. The meal starter was fried Maryland blue catfish. The entrée was venison and bacon meatloaf, topped with a lingonberry BBQ sauce served over smoked Gouda grits and braised turnip greens. Dessert was parsnip cake with cream cheese frosting.
Through ticket sales, the silent auction and donations, the event raised $9,000 for Carroll County Food Sunday.
