Chicken Shawarma Bowl
Ingredients:
- 1 cup Cherry tomatoes
- 2 cup Cucumbers
- Diced Bell Peppers
- 8 tbsp Feta cheese
- ½ c Chic Peas
- 4 tbsp Parsley, fresh
- 1 Red onion, diced
- 2 cups cooked brown rice
For Chicken Marinate:
- 1# chicken breasts 4 cloves Garlic
- 1 T Cumin
- 1 T Corriander
- 1 T Cinnamon
- 1 T Smoked Paprika
- 1 Lemon juice
- 1 t Sea Salt
- 2 tbsp Olive oil
For the Sauce:
- 1 cup Greek yogurt
- 1 tbsp Lemon juice
- ½ t Garlic Powder
- ½ T Cumin
Marinate the chicken overnight and grill the chicken to 165 degrees.
Put the Shawarma Bowl together. One scoop of hot rice, top with cherry tomatoes, cucumbers, chic peas, peppers, feta, red onion. Top with the cooked chicken, Serve with the yogurt sauce and chopped parsley.
